5 Minute Blueberry Mousse

This Blueberry Mousse recipe is easy to make and pairs beautifully with any summer fruit, from berries to peaches. It’s very good with fresh blueberries!

INGREDIENTS:

• 1 cup raw cashews
• 2 cups frozen blueberries
• 12 cups of full-fat coconut milk
• 3 tablespoons coconut oil
• 1 tablespoon maple syrup
• 1 teaspoon vanilla essence

DIRECTIONS:

• In a blender or food processor, combine all of the ingredients (excluding the berries) and whiz for 3 minutes, or until extremely smooth.
• Add the frozen berries and blend for another minute. It will instantly transform into this delicious blueberry frozen mousse!
• Serve with grated chocolate and fresh blueberries.
