Ingredients:

  • 1 and 3/4 cups all-purpose flour

  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil

  • 1 cup boiling water

For the frosting:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 2/3 cup unsweetened cocoa powder
  • 3 cups powdered sugar
  • 1/3 cup whole milk
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes until well combined.
  4. Stir in the boiling water until the batter is smooth. It will be thin, but that’s okay.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
  8. While the cakes are cooling, prepare the frosting. In a large mixing bowl, beat the softened butter until creamy.
  9. Add cocoa powder and powdered sugar to the butter and mix until well combined.
  10. Gradually add the milk, vanilla extract, and a pinch of salt, beating until smooth and creamy.
  11. Once the cakes are completely cooled, spread a layer of frosting on top of one cake layer. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
  12. You can decorate the cake with chocolate shavings, sprinkles, or any other decorations you like.
